As we noted earlier on Serious Eats, a London chef is opening a fish and chips shop selling only sustainably caught seafood. A basket of fish and chips is going to cost about $20.
A quick education: if one batch of fish and chips cost $5 and another batch of fish and chips cost $20, then the batch of fish and chips that cost $5 uses LESS resources than the one that costs $20. People don't just make up prices! And the reason this batch of fish and chips will cost $20 is because it is LESS SUSTAINABLE than the normal batch of fish and chips.
