Baking Soda Browning: Cabbage

I watched this a while back-



It was pretty cool, but onions are just onions. It felt like an unnecessary step in most dishes. Yesterday I tried it with cabbage. Completely amazing. The texture is extremely different and I wouldn't be surprised if people couldn't tell it was cabbage. But it was good, smooth, evocative of mashed potatoes as far as texture goes.
