In other words, the wheat of earlier agricultural humans, including the wheat of Biblical times, is NOT the wheat of 2010. Modern wheat is quite a different thing with differing numbers of chromosomes, different genes due to human manipulation, varying gluten protein composition, perhaps other differences.
I'm particularly intrigued by the suggest the original varieties may not be as dangerous as our modern varieties:
Interestingly, it has been suggested that einkorn wheat fails to provoke the same immune response characteristic of celiac disease provoked by modern wheat gluten, suggesting a different amino acid structure in gluten proteins. Another difference: Emmer wheat is 40% protein, compared to around 12% protein for modern wheat.
Meanwhile, they take perfectly good animal fat, as well as internal organs- all of which are healthy and nutritious for humans, and throw most of it away.

Well, I'd be more wary of eating organs and fat from cattle from a CAFO, but I see what you mean. Did you see that beef ranch in Jefferson sells a "Weston A. Price" package? All organs and such. :)
I'm buying a whole animal from them.
I've got friends with which to divide up the meat, but I'm going to have an interesting time with the organs, marrow, and fat; I'm the only one interested in them and I'm probably going to be overwhelmed. But how else do you learn to swim?
